Feeling peckish whilst out walking in the Aubrac? There’s nothing better than popping into one of the burons in the Aubrac to enjoy some traditional aligot with sausage and local specialities!

The Buron at Cap Combattut

The Buron du Cap Combattut is situated on the hills above Lake Saint-Andéol. At 15 metres deep, this lake is considered the largest in the Aubrac region; the Lakes Route will lead you there. Many walkers on the Way of St James stop here to admire it.

The buron welcomes you for a meal, but you can also pop in during the afternoon to enjoy homemade pastries, organic farm-made ice cream and craft drinks. For those who’d like to stay a little longer, the Cap Combattut buron offers overnight accommodation.

Here you’ll experience the authentic atmosphere of a buron, with traditional aligot, charcuterie and meat from the family farm in Nasbinals. Le Cap Combattut is open from 1 May to 15 November.

The Buron de Born

At the end of a path, the Buron de Born offers the chance to soak up the sunshine whilst enjoying a magnificent view of Lake Born. Many walkers stop off here for a break on the Route des Lacs, also known as the ‘Route d’Argent’; it’s the perfect opportunity to admire the iconic lakes of the Aubrac and its vast plateaus.

This old building has been restored to its former glory. With large wooden tables and a family-friendly atmosphere, you’re sure to enjoy your break here. Whether you opt for a generous platter of charcuterie, the traditional aligot with sausage, or a cut of beef, you won’t be disappointed with your visit. Make sure you leave a bit of room, as the generous cheese platter is on its way, and you simply cannot leave without trying the traditional Bastides tart – a real local institution. Le Buron de Born is open from 1 May.

Le Buron du Che

Le Buron du Che, situated in the heart of the Aubrac region – and more specifically in Nasbinals – offers the chance to sample a range of Lozère specialities, with something to suit every taste. You’ll be able to watch traditional aligot being made, as well as sample tripoux, sweetbreads with morel mushrooms, duck breast and local pork. Le Buron du Che has become a true gourmet restaurant and is sure to delight food lovers. A warm and friendly atmosphere awaits you.

Le Buron du Bes

Follow a dirt track near the Gournier bridge; at the top you’ll find the Buron du Bes, at an altitude of 1,200 metres! From the terrace, you can admire the magnificent Aubrac plateaus, and enjoy traditional aligot as well as beef from their own farm. Apparently, their perfectly baked fruit tart is a must-try when visiting the Aubrac. So why not stop off at the Buron du Bes in Recoules d’Aubrac?

Le Buron de la Treille

A Buron situated a quarter of an hour from Nasbinals – more precisely in Les Salces, at an altitude of 1,333 metres – has blended tradition and modernity to offer you the only Laguiole Buron AOP. At the Buron de la Treille, situated on the Route des Lacs, you can sample the cheese made by Ugo, a young cheesemaker. You’ll also find Laguiole cheese, tome and butter on sale directly from the farm between June and September, all produced during the winter months.

Discovering the Aubrac and its must-see attractions

We weren’t going to just leave you like that, were we? We’ve put together a suggested itinerary for your stay in the Aubrac. The Route des Lacs will take you to one of the Lozère burons, where you can enjoy traditional aligot with sausage in a warm and friendly atmosphere. A short stroll after your meal to admire the Déroc waterfall, with its breath taking view of Marchastel, before continuing along the famous Way of St James, where you can explore Aubrac villages such as Nasbinals. And round off your day on a more peaceful note with a relaxing break at the La Chaldette spa.
