When lunchtime comes round, the choice of restaurant is a no-brainer: it’ll be in a buron, and that’s that. These massive granite dwellings dot the Aubrac landscape, standing as a testament to the countless transhumance journeys that have taken place there. Stepping through their doors is like stepping into a timeless world – a delightful and cosy experience. Prefer a panoramic terrace? We chose ‘magnificent’, but we could just as easily have said ‘unshakable’, given how this château seems to have weathered the centuries without showing a single sign of ageing.
